Farmhouse Fruit Cake

Ever since I was a child my Dads favourite cake has been a farmhouse fruit cake

Its the one cake I could make and I knew there would be approval within the household

Now if you want to get a little bit higher in the good books with your Dad, then have a go at making this bad boy

To make this family favourite you will need;

175g Self Raising Flower

1 Teaspoon of mixed spice
100g Butter
100g Soft light brown sugar
2 eggs
175g mixed dried fruits
25g chopped walnuts
3 tablespoons milk

This recipe is near to impossible to get wrong, so its easy for all you non cooks out there

I mean I am able to make it taste good, so it must be taste proof

Heat the oven to 180 degrees, then grease a 7 inch round cake tin and line with greased proof paper.

Grab the flour and sift it into a bowl

Add the salt and mixed spice and put it to the side

Cream the butter and sugar in a mixing bowl until soft and light

Break up the eggs with a fork and add to the creamed mixture a little at a time

As you add the final bit of eggs, sift the flour

Add the mixed dried fruits, chopped walnuts, remaining flour and the milk and mix until blended

Spoon the mixture into the prepared tin, spread level and hollow out the centre slightly

Wack it in the over and bake for 45 minutes

Once the cake is beginning to develop into a tanned bundle of delight, lower the over temperature to 160 degrees, and cook for a further 30 minutes

Now as hard as it is leave the cake to cool once cooked, then once your satisfied or cant stop yourself any longer
